This week, I decided not to do the challenge because I think I may be allergic to dairy. Yes, sucks I know! About two months ago I started having hives everyday and it has a correlation to cheese and milk. But, until I see the allergist, I am taking it easy so this week was a no go for me.
There are people who said they would do it and I'm sure they did. Shelby was one who got back to me and she said "I made the pasta and it was delicious! I halfed the recipe and we still have left overs for three days."
Another who got back to me was the lovely Andrea Martinez. She commented that "Initially I was a little turned off by the idea of 3 cheeses...but man, this was so freaking good." She also commented that the Ricotta tasted good and she loved the parsley in it. And Andrea was a little creative as well and decided to add chicken and bread crumbs to the top. Way to take a dive into the unknown and see how it works! "Bread crumbs are always a good topper for any casserole," Andrea comments. I couldn't agree more. Who doesn't love bread crumbs? Andreas biggest success with this casserole was getting her little sister to eat it because her sister is extremely picky. WHOO HOO!!!! Here are some ratings she gives it out of a 10 (10 being the best):
